Ability to mark percentages of a task done

I have single tasks that can take many hours (I edit books) and would love to be able to have one task that is 'edit of Title' and then say it's 20 hours - but I can mark say 20% done on day one and it shows as a done task for the day, but isn't removed from my ongoing to do list so appears again to be scheduled…
