Option to capture meeting notes without a bot (non-bot transcription)

Please add an option to capture meeting notes without using Akibot or any bot-based meeting transcriber.

Many enterprise and growth-stage companies have strict policies that do not allow bots in meetings. This means users working in those environments cannot use the meeting notes feature at all, even though they would love to.

The request is simple: keep Akibot as the default or a toggle option, but also provide a way to capture notes manually or via a non-bot method. This would unlock the feature for a whole segment of users who are currently blocked.
